Weekly Sauce Recipe: Chilli Sauce

Welcome to our last weekly sauce recipe; compliments of me, the Executive Chef at The Atlantic Grill Restaurant. This is another quick and easy one and it will certainly add some heat to your cooking, and I don’t mean temperature! If you like hot foods, then you’ll love this chilli sauce… and it has so much flavour to spice up your dishes.


  • 5kg tomatoes
  • 10 onions
  • 4 garlic cloves
  • 500g whole jalapeno peppers
  • 9 cups cider vinegar
  • 3 cups sugar
  • 3 teaspoons salt
  • 2kg of red peppers seeds removed, roasted and skin off


  1. Chop everything relatively fine
  2. Place in a stockpot and boil for 1 hour then let cool completely
  3. Process in batches in a blender then boil for 2 additional hours or to desired thickness
  4. Makes approximately 24 pints depending on how much you let it boil down
