Weekly Sauce Recipe: Mustard Cream Sauce

Mustard Cream Sauce is another delectable sauce that is fairly easy to prepare. Make sure you have all your ingredients ready before you start and then just take it one step at a time. At The Atlantic Grill Restaurant, we use this sauce often, to spruce up our dishes and add an element of new flavour.


  • 1 cup dry white wine
  • 1/4 cup chopped shallots
  • 2 cups whipping cream
  • 1/4 cup Dijon mustard
  • ½ cup chicken jus
  • 1/2 teaspoon salt
  • 1/8 teaspoon cayenne
  • 2 teaspoons chopped fresh tarragon


  1. Combine the wine and shallots in a small heavy saucepan
  2. Bring to a boil and cook until reduced to 1/3 cup, about 6 minutes
  3. Add jus and whisk in the cream, mustard, salt, and cayenne
  4. Boil until thickened by 50%, about 5 minutes
  5. Remove from heat, stir in the tarragon, and adjust seasoning, to taste\
