Weekly Sauce Recipe: Ponzu Sauceon June 14, 2011
Here is another fabulous recipe straight from the archives of The Atlantic Grill Restaurant’s Executive Chef, Dallas Orr. That’s me! Homemade Ponzu Sauce takes about 15 minutes to prepare but needs an additional 2 hours (minimum) for all the flavours to infuse. This particular recipe makes about 2 ½ cups worth and will keep for several days without any loss in quality.
Ponzu Sauce is used in Japanese cuisine and is great with lightly grilled chicken or fish.
2/3 cup fresh lemon juice, more to taste
1/3 cup fresh lime juice, more to taste
¼ cup rice vinegar
1 cup good-quality soy sauce
¼ cup mirin (or ¼ cup sake and 1 tablespoon sugar)
1 3-inch piece kelp (konbu)
½ cup (about ¼ ounce) dried bonito flakes
1. Combine all ingredients in a bowl
2. Allow it to sit for at least 2 hours, preferably overnight
3. Strain the mixture
4. Add a small squeeze of fresh lemon juice or lime juice before use
