Weekly Sauce Recipe: Mushroom Cream Sauce

Our weekly sauce recipe is a way for us to give back to those who adore our food so that you can enjoy the fine flavours that I (Dallas Orr) and my team of chefs prepare for you. This week we are sharing the superb Mushroom Cream Sauce with you; a great addition for steaks, chicken, vegetable dishes and burgers. And it isn’t too difficult to prepare, so enjoy!
Ingredients
- 1 cup sliced mushrooms (wild are great but white buttons will do)
- 2 tsp minced garlic
- Salt and pepper to taste
- ½ cup dry vermouth
- 1 cup chicken Jus
- ¼ tsp dried thyme (use fresh if available)
- ¼ tsp rubbed sage (use fresh if available)
- 1 cup cream
- Chopped fresh parsley for garnish
Method
- In a skillet, add a little oil if needed and sauté the mushrooms over medium-high heat for about 2 minutes
- Add the garlic, salt and pepper; sauté for another minute
- Add the vermouth and reduce for 1 minute
- Then add the chicken jus, thyme and sage
- Reduce, add the cream and reduce until thickened
Simple, yet delicious!
